  • 15–20 heads fresh elderflower (unopened and freshly picked)
  • 1 lemon, sliced
  • 1,000 ml water
  • 1,000 ml sugar

For a smoother syrup, only use the tiny blossoms—not the thick stems, which can introduce unwanted bitterness.

How to Make Elderflower Syrup at Home

  • Gently shake and inspect elderflower heads to remove bugs or debris. Avoid washing (it removes flavor); do not use flowers sprayed with chemicals.
  • Place the blossoms and lemon slices in a large, heatproof bowl.
  • Bring 1,000 ml water to a gentle boil, then stir in 1,000 ml sugar until fully dissolved.
  • Pour the hot syrup over the blossoms and lemon slices. Cover and steep for 24–48 hours at room temperature.
