Ava: How did you first get into bartending? Was it something you always knew you wanted to do?
Enzo: I got into the restaurant business initially to earn some extra pocket money while I was studying. At that time, I was focused on a career in security and had dreams of becoming a firefighter, like my father. But the more time I spent behind the bar, the more I realized that my true place was there. It wasn’t just about serving drinks — it was about connecting with people, creating memorable experiences, and being part of something bigger. So, what started as a side job turned into my true calling.
Ava: So, what makes a great bartender in your eyes?
Enzo: For me, a great bartender is above all a great host. It’s not just about knowing how to mix drinks; it’s about making people feel welcome, understood, and valued. A bartender needs to enjoy serving others and be able to create a genuine connection with guests. You have to be present and engaged, using all your senses — observing, listening, and feeling the atmosphere around you. And, of course, being adaptable is key. Each night, each crowd is different, and a great bartender is someone who can read the room and adjust accordingly to make sure every guest has the best experience possible.
Ava: Speaking of drinks, do you have a signature cocktail?
Enzo: I don’t have a single signature cocktail just yet. However, I’ve been working on a new cocktail menu for the upcoming season at La Maison Douce Époque, and I’m excited for people to try it. I can’t give too much away, but it’s going to be a menu full of stories in every glass, with both new creations and updated classics. It’s a true reflection of the journey I’ve been on as a bartender, and I’m really looking forward to sharing it with everyone.
Ava: What do you think creates an atmosphere that keeps guests coming back to a bar?
Enzo: There’s no magic formula for this. It depends on the kind of bar, whether it’s a laid-back brasserie, a luxury hotel bar, or a high-energy nightlife venue. The most important thing, though, is warmth. People want to feel welcomed, whether they’re on their own or with friends. A great atmosphere is about creating a space where guests feel comfortable and valued. It’s about sharing an experience, and that’s really the heart of bartending — creating those moments of connection that make guests want to return.
Ava: What is your favorite cocktail to drink or craft?
Enzo: If I had to choose just one, it would be the Caipirinha. It holds a special place for me, especially after my trips to Brazil where I met some incredible bartenders and distillers who taught me the secrets to making the perfect one. I love the refreshing simplicity of it — just lime, sugar, and cachaça — but there’s so much room for subtlety and depth if you do it right. Another favorite of mine is the Sidecar. It’s a timeless classic, elegant and sophisticated, and I just love both crafting it and drinking it.
Ava: What do you think the future of bar culture will look like?
Enzo: I believe bar culture is moving toward authenticity and personalized experiences. More than ever, guests are seeking bars that tell a story, that have a strong identity, and that offer a heartfelt approach to hospitality. People are looking for more than just a drink; they want a connection, an experience, something unique. Bars that focus on these elements — attention to detail, authenticity, and personalization — are going to thrive in the future.
Ava: What’s your dream for the future?
Enzo: Like many bartenders, I’ve always dreamed of opening my own bar one day. It’s a project that’s very close to my heart. I want to create a space that reflects who I am and the vision I have for hospitality. A place where I can fully express myself and share my love for cocktails and the art of bartending. It’s a dream I’m actively working toward, and I can’t wait to make it a reality.
Ava: What do you want people to know about you as a bartender?
Enzo: At the end of the day, bartending is about people. It's about creating an environment where every guest feels special, whether it’s with a perfectly crafted cocktail or just a warm smile. For me, it’s not about the drinks themselves, but the moments we create with them. I want people to know that behind every drink I serve is a true passion for hospitality and a deep love for what I do.
